Recipe time ? I made this delicious stewed chicken originally for tacos and then turned it into a sandwich the next day by throwing it on a ciabatta bread with the left over pickled red onions ?
Paprika instant pot chicken
Ingredients:
1 lb chicken thighs or breast
2 shallots
3 cloves of garlic
1/2 bullion cube
1/2 tsp cumin
2 tsp smoked paprika
1 tsp chili powder
1 tsp turmeric
1 tsp adobo seasoning
1 tsp dried oregano
Salt & pepper to taste
1 can diced tomato’s
1/2 - 1 cup chicken or veggie stock
1 tbsp cornstarch
*Note: This can be made on the stove top or in an instant pot via pressure cooking, which is much faster. I decided to pressure cook since my chicken was still frozen. You’re able to cook frozen chicken in the pressure cooker because it gets to a high heat quickly, ensuring the meat isn’t in the unsafe temperatures for too long. Whereas, in a slow cooker that would be the case.
1️⃣Start by sautéing chopped shallots and smashed garlic in olive oil, or an oil of your choosing. As those caramelized, I added the can of tomatoes, chicken, seasoning & stock.
2️⃣Once everything is combined pressure cook on high for 13 minutes. Allow a few minutes for the pressure cooker to release the steam. If chicken has skin, I suggest removing it at this stage of cooking and adding back into the pot.
3️⃣Then mix cornstarch and cold water until dissolved. Then add to pot with chicken & stock. Turn instant pot to sauté mode and let the sauce thicken up and the chicken stew for another 10 minutes or until very tender.
**If I were making this on the stove top and had thawed chicken I would have added the seasoning directly to the chicken and sit while sautéing the shallots and garlic. Once those cooked I would take them out and then sear the chicken in oil before adding the tomatoes & stock.
From there I would bring it to a boil, cover and let simmer until the chicken is falling apart and tender. That can take 30+ minutes depending on how large the chicken thighs/breasts are.
Once the chicken is close to being done add the cornstarch & water mixture to help thicken up the sauce.
Enjoy on just about anything! It’s a great way to meal prep for the week & can be used in a variety of ways.
